Harvest Pea Soup

This isn’t your regular stand your spoon up pea soup!

I call it harvest pea soup, because I am using the last of the winter vegetables from my yard – kale, leeks and carrots!

This very easy to make pea soup in packed full of good for you veggies! Kale is a nutritional powerhouse filled with powerful antioxidants, Vitamin K & C, Iron and more.
Leeks aren’t to shabby either packed with polyphenols, which are strong antioxidants, Vitamin K, C, B6, Iron and even more! Carrots, cauliflower also provide many nutritional must haves for a healthy diet!

You will need:

4 litres stock, I used a homemade vegetable stock and boiled the ham bone in it for a couple hours for added flavour!
2 cups chopped ham, add more if you like, this recipe is a base recipe, please feel free to add more or less of anything, you can’t go wrong with this soup.
3 cups sliced leeks
3 cups finely chopped fresh kale
1 1/2 cups chopped carrots
1 1/2 cups chopped cauliflower
2 – 3 minced garlic cloves
2 cups dried split green peas
2 large ribs sliced celery
S & P to taste

1. In your large soup pot, combine leeks, celery, garlic and an 1/8 cup stock, simmer till tender 5 – 10 minutes.
2. Now add remaining stock, spilt peas, kale and ham. Bring to a rolling boil for 20 – 30 minutes then return to medium heat for another hour and a half or until peas are almost at your preferred consistency   I like to leave my peas slightly tender.
3. About an hour before serving add the remaining vegetables – carrots, cauliflower – bring to a rolling boil then turn heat down to simmer in about 5 – 10 minutes your soup is ready to serve!  By this time the leeks, kale and celery have almost disappeared into the soup base. If you want a chunkier soup add them with the other vegetables towards the end. 

This soup does well in the freezer if you find the portion to large.
Even the kids love this soup.. what kids like yucky pea soup. lol
